Mediterranean Chickpea Salad

Serves one (recipe easily doubled)

  • 1/2 cup chickpeas, drained and rinsed
  • 1 small tomato, cut into chunks
  • 1/4 cucumber, cut into chunks
  • 2 teaspoons olive oil
  • 1 ounce feta cheese
  1. Mix chickpeas, tomato, and cucumber together
  2. Pour olive oil over the mixture and coat thoroughly
  3. Crumble feta over the mixture and toss
  4. Serve and enjoy

Serving suggestions: Serve with whole wheat crackers as a dip or alongside whole wheat crackers or bread with hummus
