Serves one (recipe easily doubled)
- 1/2 cup chickpeas, drained and rinsed
- 1 small tomato, cut into chunks
- 1/4 cucumber, cut into chunks
- 2 teaspoons olive oil
- 1 ounce feta cheese
- Mix chickpeas, tomato, and cucumber together
- Pour olive oil over the mixture and coat thoroughly
- Crumble feta over the mixture and toss
- Serve and enjoy
Serving suggestions: Serve with whole wheat crackers as a dip or alongside whole wheat crackers or bread with hummus
